A nakiri knife, also known as a nakiri bocho, is a Japanese-style knife used for chopping vegetables. Characterized by its straight blade edge and squared off tips, the nakiri knife allows you to cut all the way through to the cutting board without having to use a horizontal push or pull.
The curvature in the rectangular thin blade of this knife allows for a smooth rocking action, which makes it excellent for delicate chores.
- Forged from 3 layers of AUS 10 steel
- Rockwell hardness of 59-61
- Blade length is 6-1/4", with an overall length of 11-1/2".
The blade blank for this knife is available as a kit at Woodcraft retail stores and it was finished with custom handle material produced in house at Bradford Hunt Design and custom stainless steel pins instead of the rivets with which the kit is usually supplied.
